Coffee Rum Ice Cream Recipe:
1. Scald the milk in the top of a double boiler
2. Mix the sugar, flour and a little bit of milk to form a paste
3. Add the paste to the scalded milk and cook the mixture while constantly stirring until it is a thick and smooth sauce
4. Beat the eggs well and mix them with a little of the hot sauce
5. Add the eggs to the sauce
6. Continue to cook the custard while stirring until it is thick enough to coat a spoon
7. Remove the pan from the heat and stir in the gelatin and the salt
8. Cool the cream, stirring it from time to time
9. Add the coffee extract and the rum
10. Fold in the cups of whipped heavy cream
11. Freeze the ice cream

2 cups milk
1/2 cup confectioners’ sugar
1 and 1/2 tablespoons flour
2 eggs
1/2 teaspoon salt
1 teaspoon gelatin softened in 1 tablespoon cold water
2 tablespoons coffee extract
Dark Jamaica rum
2 cups heavy cream, stiffly whipped
