Baked Eggs and Mushroom

Baked Eggs and Mushroom Recipe:

1. Fry the bacon in butter for about 3minutes over moderate heat

2. Add the mushrooms and continue frying for another 2minutes

3. Season with salt and pepper

4. Spoon the mixture into 8 ramekin dishes and break an egg into each dish

5. Top with cream and sprinkle with a little freshly chopped chervil

6. Bake in the center of the preheated oven for about 10minutes or until the egg whites are just set

7. Cut the crust off the bread and slice it into narrow fingers

8. Deep-fry the bread slices in hot oil until they are crisp and golden

9. Serve two ramekins per person and serve the bread separately

List of ingredients required:

(serves 4 people)

Salt and black pepper
4 tablespoons double cream
8 eggs
8 thin rashers lean bacon
2 oz butter
4 oz finely chopped button mushrooms
Oil for frying
4 slices white bread

The oven should be preheated at a temperature of 350F (177C/180C)
