Mushroom Pie

Mushroom Pie Recipe:

  1. Wash, dry and trim the stems of 2 pounds fresh mushrooms.
  2. Heat 4 tablespoons butter in a skillet.
  3. Add the mushrooms.
  4. Sprinkle them with salt, pepper and the juice of half a lemon.
  5. Cover the skillet.
  6. Cook the mushrooms for 10 minutes.
  7. Shake the pan frequently.
  8. Arrange the mushrooms in a buttered quarts baking dish.
  9. Add 2 more tablespoons butter to the juices in the pan.
  10. Stir in 3 tablespoons flour.
  11. Gradually stir in 1 1/2 cup chicken stock.
  12. Cook, while stirring continuously until the sauce is smooth and thickened.
  13. Stir in 1/2 cup Madeira and 1/2 cup hot heavy cream.
  14. Season the sauce with salt and freshly ground pepper.
  15. Pour the sauce over the mushrooms.
  16. Cover with  a layer of flaky pie dough.
  17. Brush the dough with a beaten egg.
  18. Make a few slits in the top.
  19. Bake in a hot oven (450ºF) for 15 minutes.
  20. Reduce the heat to moderate and bake for 10 to 15 minutes longer.

  • 3 tablespoons flour.
  • 1/2 lemon, juiced.
  • 1 1/2 cup chicken stock.
  • 1/2 cup Madeira.
  • 1/2 cup heavy cream.
  • 1 egg, beaten.
  • Flaky pie dough.
