Paprika Schnitzel Recipe:
- Sauté 2 pounds veal scallops in 6 tablespoons butter.
- Transfer the meat to a serving platter.
- Add 2 finely shopped shallots to the butter in the casserole.
- Sauté the shallots until golden.
- Stir in 1 tablespoon flour mixed with 1/2 tablespoon paprika.
- Gradually add 1 cup hot light stock and 1/4 cup dry white wine.
- Stir constantly.
- Continue to cook, stirring, until the sauce is thickened.
- Lower the flame.
- Simmer for about 10 minutes.
- Stir in 1/2 cup thick sour cream.
- Heat but do not boil.
- Stir in a dash of lemon juice.
- Pour the sauce over the veal.
