This tamale casserole is scrumptious and it it very simple to make. The casserole does not take a long time to bake and you can expect to be done with everything in about 2 hours. All you need is a few common ingredients found at just about every store and supermarket.
Tamale Casserole Recipe:
- Combine corn meal, milk, salt, chili powder, garlic salt, pepper and cayenne in a large saucepan.
- Add the tomatoes and tomato sauce.
- Mix well together.
- Cook over low heat for 30 minutes, stirring occasionally.
- Fry the bacon until crisp.
- Remove all but 1 tablespoon bacon fat from the frying pan.
- Add the onion and green pepper.
- Cook until tender whilst stirring occasionally.
- Add ground beef and brown.
- Combine meat mixture, corn, bacon and olives with the cooked corn meal mixture.
- Pour into 2 quarts casserole.
- Top with cheese.
- Bake in a slow oven at 300ºF for 1 1/2 hours.

- 1/2 cup yellow corn meal.
- 2 cups milk.
- 2 1/4 teaspoons salt.
- 4 teaspoons chili powder.
- 1/4 teaspoon garlic salt.
- 1/8 teaspoon pepper.
- Dash of cayenne.
- 2 cups canned tomatoes.
- 1/2 cup canned tomato juice.
- 4 slices bacon, cut in small pieces.
- 1 medium onion, diced.
- 1/2 medium green pepper, diced.
- 1 pound ground beef.
- 1 cup canned whole kernel corn.
- 3/4 cup ripe olives, coarsely chopped.
- 1/2 cup grated sharp Cheddar cheese.
