These savory lamb shanks is a great edition to your dinner. It does need a little bit of time, so you might want to do this on your day off or if you do not mind eating late at night.
Savory Lamb Shanks Recipe:
- Combine 1/4 cup flour, garlic salt, 1/2 teaspoon salt and pepper in a bowl.
- Coat the lamb shanks with seasoned flour.
- Melt butter in a large skillet.
- Add the meat.
- Brown slowly, turning frequently.
- Remove the meat.
- Sprinkle 2 tablespoons of the seasoned flour mixture in the skillet.
- Mix until smooth.
- Gradually add 1 cup of beef stock, stirring vigorously over moderate heat.
- Continue to cook until thickened, stirring constantly.
- Add browned meat.
- Cover and simmer over low heat, stirring occasionally, for 1 1/2 hours or until meat is tender.
- If the gravy becomes too thick during cooking, thin with some of the remaining beef stock.
- Remove meat from the skillet and skim off all fat from the gravy.
- Blend together 1 tablespoon flour and sour cream.
- Add remaining consommé and stir until smooth.
- Cook over low heat, stirring constantly until thickened.
- Add meat and peas and heat.
- If desired, serve over hot buttered noodles.
