Mexican Chicken

Mexican Chicken Recipe:

1. Cut the chicken into pieces

2. Sprinkle the pieces with salt and pepper

3. Saute the chicken in a large saucepan using the 3 tablespoons of butter until the pieces are browned on all sides

4. Add the almonds, raisins, pineapple, cinnamon, cloves and orange juice

5. Cover the pan tightly and simmer the chicken for about 45minutes or until the pieces are tender

6. Separately mix a smooth paste using the flour and the cold water

7. Stir the paste in the pan

8. Cook and stir the chicken until the sauce is thickened

9. Simmer the sauce for 10minutes longer

10. Arrange the chicken on a warmed serving platter and pour a little sauce over it

11. Garnish the platter with the slices of avocado

12. Serve the rest of the sauce separately

4 to 6 lb chicken
Salt and pepper
3 tablespoons butter
12 blanched almonds
1/2 cup seeded raisins
1 cup chopped pineapple
1/8 teaspoon ground cinnamon
1/8 teaspoon cloves
2 cups orange juice
1 tablespoon flour
2 tablespoons cold water
Avocado, Half-moon slices(garnish)
