Chicken Marengo Recipe:
1. Cut the chickens up into small portions
2. Rub each piece with a damp cloth
3. Season the pieces with salt and pepper and sprinkle them with the flour
4. Heat the oil in a large pan
5. Fry the chicken pieces over high heat until golden brown (turn the heat frequently)
6. Transfer the chicken pieces to a earthenware casserole dish
7. Add the garlic and the bouquet garni
8. Add the cup of white wine, the brandy and the tomatoes
9. Cover the casserole tightly
10. Put the casserole dish on the lowered heat and cook gently until the chicken is almost tender (turn them several times with a wooden spoon)
11. After 30minutes, taste for seasoning and add the mushroom caps
12. Cook for a further 10minutes or until the chicken is tender
13. Sprinkle the dish with the chopped parsley

2 small chickens,about 2 lb each
Salt and pepper
A little flour
4 tablespoons oil
2 large cloves garlic, finely chopped
Bouquet garni
1 cup white wine
1 jigger brandy
2 large tomatoes, peeled and cut
12 peeled mushroom caps, cut in quarters
