Apple Sauce Cake:
1. Make the puree in the following way:
A. Wash, peel and core the apples
B. Cook the apples over gentle heat with the piece of lemon rind and the water until they are soft
C. Liquidize the apple pulp
D. Sweeten to taste with sugar
2. Grease an 8inch (200mm) ring mould
3. Mix the sugar, cinnamon and mixed spice together in a small bowl
4. Melt 2 oz (50g) of the butter in a pan and keep it warm over low heat
5. Rub the remaining 4 oz (115g) of butter into the flour until the mixture resembles breadcrumbs
6. Beat the egg with the milk and apple puree and add the mixture to the flour
7. Rub the mixture to a dough
8. Take a dessertspoon of the dough, form it into a ball
9. Dip the ball into the melted butter then into the spiced sugar mixture
10. Place the balls in the base of the mould and add 9 more to complete the ring
11. Place a second row of ten balls of dough in the gaps in the first row
12. Bake in the center of the preheated oven for about 45minutes until the cake is springy to the touch
13. Cool in the mould for 5minutes then turn out onto a wooden board or a flat plate to serve warm or onto a wire rack to cool
14. Serve the cake cut into slices

12 oz (350g) self-raising flour
6 oz (175g) unsalted butter
6 tablespoons apple puree
4 oz (115g) granulated sugar
2 tablespoons milk
1 and 1/2 level teaspoons ground cinnamon
1 egg
1/2 teaspoon ground mixed spice
For the apple puree:
8 oz (225g) apples
Piece of lemon peel
1 to 2 tablespoons of water
Sugar
The oven should be preheated at a temperature of 400F (200C)
