Almond Cake

Almond Cake Recipe:

1. Crush the almonds into a powder

2. Combine the almond powder with the 6tablespoons of granulated sugar and 2eggs

3. Beat the mixture well with an electric beater or a hand whip

4. Add the 6 tablespoons of sugar and the remaining egg

5. Continue to beat until the mixture is light and fluffy

6. Put the butter in a warm bowl and work it with a wooden spoon until it is creamy but not oily

7. Cut and fold the softened butter into the first mixture, using a metal spatula

8. Sift the flour, salt and kirsch together

9. Fold the sifted ingredients into the mixture

10. Pour the batter into a shallow 9inch pan lined with heavy wax paper and well buttered

11. Bake the cake in a slow oven of 300F (150C) for about 40minutes or until it tests done

12. Turn it out on a rack to cool

13. Remove the paper and serve the cake plain or with a sprinkling of icing sugar

6 tablespoons butter, cut into small pieces
1/2 cup cake flour
1/4 teaspoon salt
1 tablespoon kirsch
