Swedish Cardamom Cake

Swedish Cardamom Cake Recipe:

1. Grease and line a 7 to 8inch (180 to 200mm) round cake tin

2. Peel away the outer green husks of the cardamom pods and remove the tiny black seeds

3. Crush these to a fine powder with a pestle and mortar

4. Measure the sugar into a bowl and beat in the butter and egg

5. Mix in the ground cardamom and cream

6. Sieve the flour with baking powder and fold in with the flaked almonds

7. Pour the mixture into the prepared tin

8. Bake in the center of the preheated oven for about 50minutes or until a fine skewer inserted into the center of the cake comes out clean

9. Cool the cake in the tin for about 2minutes then turn out onto a wire rack

10. Sprinkle the cake lightly with caster sugar just before serving

List of ingredients required:

16 cardamom pods
8 oz (225g) plain flour
6 oz (175g) caster sugar
2 oz (50g) melted butter
1 oz (25g) flaked almonds
1 beaten egg
1/4 pint (150ml) single cream
1 level teaspoon baking powder
A little caster sugar

The oven should be preheated at a temperature of 350F (180C)
