Strawberry Shortcake

Strawberry Shortcake Recipe:

1. Sift the the flour, cream of tartar, bicarbonate of soda and the salt together into a bowl

2. Cut the butter into small pieces and rub it into the flour mixture until it resembles bread crumbs

3. Blend the sugar in the mixture

4. Make a well in the center and stir in the beaten egg

5. Add enough milk to give the mixture a soft but manageable dough

6. Knead the dough lightly on a floured surface then roll it out into a 7inch circle

7. Place the dough on a greased baking tray and dust the top lightly with flour

8. Bake towards the top of the oven for about 20minutes at a temperature of 425F(218C)

9. Leave the cake to cool slightly on a wire rack

For the filling:

10. Slice the strawberries into thick slices

11. Whisk the cream and the milk together, sweetened with caster sugar to taste. Whisk it until it holds its shape

12. Cut the cake horizontally into 3 layers with a serrated knife and lightly butter each layer

13. Spread the cream over all three layers and then top them with the sliced strawberries

14. Press the layers lightly back together and decorate the top of the cake with the cream

List of ingredients required:

8 oz plain flour
1 level teaspoon cream of tartar
1/2 level teaspoon bicarbonate of soda
Pinch of salt
2 oz butter or margarine
1 and 1/2 oz caster sugar
1 egg
3 to 4 tablespoons of milk

Ingredients for the filling:

1/2 lb hulled strawberries
1/2 pint double cream
1 tablespoon milk
Caster sugar
