Spare ribs in Marsala

Spare ribs in Marsala Recipe:

1. Trim any fat from the ribs

2. Heat the oil in a heavy-based saucepan

3. Peel and crush the garlic cloves and rub them over the ribs

4. Finely chop the parsley and mix it with the fennel

5. Rub the parsley mixture into the ribs

6. Put the ribs in a pan and cook on both sides until they are pale brown

7. Pour over the orange juice and stock

8. Add the marsala and correct the seasoning

9. Cook the spare ribs on the middle shelf of the preheated oven for 45minutes

10. Lift the ribs out and arrange them on a bed of noodles

11. Skim the fat off the juices and pour over the meat

12. Garnish with slices of orange and small bunches of watercress

(serves 6 people)

6 spare rib chops of pork
3 tablespoons olive oil
3 tablespoons marsala wine
2 heaped tablespoons parsley
2 cloves garlic
1 level teaspoon ground fennel
Salt and black pepper
1/4 pint chicken stock
1/4 pint fresh orange juice
Orange and watercress (garnish)
The oven should be preheated at a temperature of 350F (180C)
