Frittelle di Ricotta

Frittelle di Ricotta Recipe:

1. Beat the flour, sugar and the eggs into the ricotta cheese

2. Stir in the grated rind of lemon, brandy and the pinch of salt

3. Let the mixture stand for at least 1 hour before frying

4. Put a fritter the size and shape of a walnut in the bowl of a long handled spoon

5. Hold the spoon in the hot oil for 10 seconds or until a crust forms on the fritter

6. Gently withdraw the spoon and put in another frittella

7. Sprinkle the fritelle with the confectioners’ sugar and serve piping hot

List of ingredients required:

1/4 cup flour
Grated rind of 1/2 lemon
2 scant tablespoons sugar
2 tablespoons brandy
A pinch of salt
2 beaten eggs
1/2 lb ricotta cheese
Confectioners’ sugar
