Steamed Fish

Steamed Fish Recipe:

1. Wash the fish thoroughly both inside and outside and pat it dry with kitchen absorbent paper

2. Make diagonal slashes on each side of the fish using a sharp knife

3. Mix 1 and 1/ 2 teaspoons of salt with pepper and the sugar

4. Rub the inside and outside of the fish with the salt mixture

5. Place about 1/ 3 of the spring onions and root ginger inside the fish

6. Place the fish in a steamer or fish cattle

7. Cover the steamer and steam the fish for 15 to 20 minutes

8. While the fish is cooking, boil the carrot strips for 2 minutes

9. Drain the carrots thoroughly

10. Heat the vegetable oil in a heavy-based frying pan

11.Add the remaining spring onions, the root ginger, green pepper and the carrot strips to the pan and stir-fry the mixture for a few minutes

(serves 4 people)

700 to 900g of whole fish, gutted and clean
Salt and freshly ground pepper
1/ 2 teaspoon sugar
1 bunch of spring onions, trimmed and finely chopped
25mm piece root ginger, peeled and thinly cut
4 small carrots, peeled and cut into small matchstick strips
2 tablespoons vegetable oil
1 green pepper, cored, seeded and cut into thin rings
2 tablespoons soya sauce
2 tablespoons dry sherry
1 tablespoon sesame oil
