Chesapeake Oyster Stew

Chesapeake Oyster Stew:

  1. Strain the liquid from 1 1/2 pints freshly opened oysters.
  2. Melt 5 tablespoons butter in a large skillet or in the top pan of a chafing dish.
  3. Add the oyster liquid.
  4. Heat lowly.
  5. When the liquid begins to bubble, add 1 cup finely chopped onion.
  6. Add 1 cup finely chopped celery with the leaves.
  7. Add a small apple, finely chopped.
  8. Cook slowly and stir constantly until the onion and celery are soft.
  9. Add 1 cup cream.
  10. Heat well.
  11. Add the oysters.
  12. Continue to cook slowly until the oysters are hot.
  13. Do not allow the liquid to boil..
  14. If the stew needs thinning, add 1/2 cup milk.
