Spiced Red Cabbage with Juniper Recipe:
1. In a large deep casserole, place the shredded cabbage, sliced apple, juniper berries and the cubed bacon in layers
2. Press the bay leaves and the rosemary into the center of the casserole
3. Mix the red wine with the brandy and the salt and pepper to taste
4. Pour the wine mixture over the cabbage
5. Lay a piece of buttered greaseproof paper on top of the cabbage and then cover the casserole with a lid
6. Cook in the preheated oven for about 2 and 1/2hours (check a few times while cooking to make sure the liquid has not evaporated completely)
7. Add some extra wine if necessary
8. Serve hot with fatty meat or poultry

2 dessert apples, cored and sliced but not peeled
1 medium-sized red cabbage, finely shredded
4 oz (115g) piece streaky bacon, cut into small cubes
1 to 2 level teaspoons of crushed juniper berries
2 bay leaves
Large sprig of fresh rosemary
225ml red wine
3 tablespoons brandy
Salt and freshly ground pepper
The oven should be preheated at a temperature of 300F (150C)
