Persimmon Pudding

Persimmon Pudding Recipe:

1. Mix the following ingredients together: persimmon pulp, eggs and milk

2. Sift the following ingredients together: flour, sugar, salt, coriander and soda

3. Pour the liquid mixture into the dry ingredients

4. Add the melted butter and stir the pudding briefly

5. Bake the pudding in a shallow buttered pan in an oven of moderately low heat of 325F (160C) for about 1 hour

6. Cool the pudding, cut it into squares and serve it with whipped cream

2 cups mashed and sieved persimmon pulp
2 cups sifted flour
1 and 1/2 cups sugar
1 teaspoon salt
1 teaspoon coriander
1/3 cups milk
3 beaten eggs
1/2 teaspoon soda
3 tablespoons melted butter
Whipped cream
