Melon Salad

Melon Salad Recipe:

1. Peel the cucumber and dice it into 1/2 inches

2. Sprinkle with salt and leave it to stand for 30minutes

3. Cut the melon cross-ways in half and remove the seeds

4. Carefully scoop out the flesh in small bowls

5. Skin the tomatoes, cut them in half and remove the cores and seeds

6. Chop the tomato flesh roughly

7. Mix the ingredients for the dressing (add the oil last)

8. Rinse the cucumber in cold water and pat it dry with kitchen absorbent paper

9. Put the melon , tomato and cucumber in a large bowl

10. Pour the dressing over the melon mixture and mix well

11. Chill the salad in the refrigerator for at least an hour while stirring occasionally

12. Serve the salad in individual glass bowls and sprinkle with the mint, chives and parsley

List of ingredients required:

1 melon
Salt and black pepper
6 tomatoes
1 cucumber

For the dressing:

3 tablespoons lemon juice
6 tablespoons salad oil
1 to 2 level tablespoons caster sugar


1 dessertspoon each of :
chopped mint
