Gazpacho Recipe:
- Rub a glass bowl with a cut clove of garlic.
- Peel, seed and lightly chop 6 large ripe tomatoes and 2 cucumbers.
- Add the tomatoes and cucumbers to the glass bowl.
- Add 1/2 cup minced red or green sweet pepper and onion.
- Pour 2 cups of fresh tomato juice over the vegetables.
- Pour over 1/3 cup olive oil and 3 tablespoons lemon juice.
- Season the gazpacho to taste with salt, pepper and a dash of Tabasco.
- Chill thoroughly.
- Serve the gazpacho in individual chilled glass bowls.
- Add an ice cube to each.
- Sprinkle the soup generously with chopped parsley.
