Partridge Pie

Partridge Pie Recipe:

  1. Cut 3 partridge into serving pieces.
  2. Melt 5 tablespoons butter in a skillet.
  3. Sauté the pieces gently until they are brown but not cooked through.
  4. Cut 1/2 pound each of veal and smoked ham into thin slices.
  5. Line a deep, buttered pie dish with the meat slices.
  6. Add the partridge and 3 hard cooked eggs, sliced.
  7. Add 9 mushroom caps and salt and pepper to taste.
  8. Pour 1 cup rich chicken stock over the mixture.
  9. Add another layer of thinly sliced veal and smoked ham.
  10. Cover the dish with pie crust.
  11. Press the edges to the rim of the dish.
  12. Make several slits in the top.
  13. Bake in a moderate oven (350°F) for 40 to 50 minutes.
  14. Serve hot or cold.
