Fried Codfish with Sweet and Sour Sauce Recipe

Fried Codfish with Sweet and Sour Sauce Recipe:

1. Mix together the eggs, cornstarch, dry sherry and the salt in a large bowl

2. Coat the fish fillets in the mixture

3. Roll the fillet in the bread crumbs

4. Fry the fillets in deep oil for about 5minutes

5. Drain the fillets in absorbent kitchen paper

6. Just before serving, pour the sweet and sour sauce over the fillets

To make the sweet and sour sauce:

1. Heat the lard in a saucepan

2. Add the chicken stock, sugar, vinegar, ginger and tomato ketchup to the pan

3. Mix the cornstarch in the cup of water then add this mixture to the pan

4. Stir the sauce over the heat until it is hot and well blended

5. Pour it over the fish fillets

List of ingredients required:

6 slices fresh codfish
4 egg yolks
2 tablespoons dried sherry
5 tablespoons cornstarch
1/2 teaspoon salt
1/2 cup of fine dry bread crumbs

For the sauce:

1/4 cup lard
1/2 cup chicken stock
1/4 cup sugar
6 tablespoons cider vinegar
2 tablespoons minced fresh ginger
2 tablespoons tomato ketchup
1 and 1/3 tablespoons cornstarch
1/3 cup cold water
