Cheese Puffs Recipe:
1. Sieve the flour and set it aside on greaseproof paper
2. Put the butter and water in a large pan and heat gently until the butter has melted
3. Raise the heat
4. When the liquid boils, pour in the sieved flour
5. Beat the mixture with a wooden spoon until it is smooth and leaves the sides of the pan
6. Let the mixture cool (until you can hold the sides of the pan)
7. Beat in the eggs one by one
8. Continue beating the mixture until it is glossy
9. Stir in the mustard, grated cheese and the paprika
10. Season to taste with salt and pepper
11. Put the oil in a separate frying pan
12. Heat the oil to 375F (190C)
13. Put teaspoons of the mixture into the hot oil one by one but in batches
14. Fry the teaspoon mixtures for about 5minutes until they are puffed up and brown
15. Remove the puffs with a slotted spoon and drain them on absorbent kitchen paper
16. Keep the cooked puffs warm in a low oven while frying the remainder of the mixture
17. Pile the hot cheese puffs onto a plate and sprinkle them with the Parmesan cheese and paprika

2 and 1/2 oz (65g) plain flour
150ml water
2 oz (50g) butter
1/4 teaspoon paprika
Oil for deep-frying
1 and 1/2 oz (40g) grated Parmesan cheese
2 eggs
1 tablespoon mustard
