Minted Apple Snow Recipe:
1. Peel, core and slice the apples
2. Put the apples in a pan with the orange rind and juice
3. Simmer gently until the mixture is pulpy
4. Sieve the apple mixture or blend it in a liquidizer to produce a smooth Pure.Leave it to cool
5. Just before the meal, whisk the egg whites until stiff and whisk in the sugar
6. Fold the egg white and the chopped mint into the apple Pure
7. Heap the apple snow into tall glasses and decorate it with a few mint leaves and strips of orange zest

1 lb (450g) cooking apples
Finely grated rind and juice of 1 large orange
2 egg whites
3 oz (75g) caster sugar
3 level tablespoons of finely chopped fresh mint
Ingredients for decoration:
A few whole mint leaves
Thin strips of orange zest
