Almond Pudding Recipe:
1. Soak the gelatin in the cold water for 5minutes
2. Dissolve the gelatin in the boiling water
3. Stir in the cup of sugar and continue to stir the mixture over cracked ice until it cools and begins to thicken
4. Beat the mixture with a rotary beater until it is frothy
5. Fold in the stiffly beaten egg whites and the almond extract
6. Pour a layer of the mixture into a mold that has been dipped in cold water
7. Cover that layer with a layer of blanched chopped almonds
8. Continue alternating the layers until the mold is filled and the cup of almonds is used up
9. Chill the pudding until it is thoroughly set
10. Unmold it and serve with a desired sauce

1 cup boiling water
1 tablespoon gelatin
5 egg whites, stiffly beaten
1/2 teaspoon almond extract
1 cup blanched, chopped and toasted almonds
