Hot Coriander Mushrooms Recipe:
1. Melt the butter in a heavy-based pan
2. Add the onion and the crushed garlic to the pan
3. Fry gently for 5minutes or until soft and lightly coloured and then set aside
4. Crush the coriander seeds finely with a pestle and mortar
5. Add to the onion and garlic and fry for about 2minutes
6. Add the mushrooms and increase the heat
7. Add salt and pepper to taste and toss to coat in the onion mixture for 3minutes
8. Toast the bread
9. Stir the soured cream into the mushrooms and heat through gently
10. Place a piece of toast on each of four plates and spoon the mushrooms on top
11. Sprinkle with chopped fresh coriander leaves and serve immediately

8 oz (225g) mushrooms,wiped and neatly sliced
1 and 1/2 oz (40g) butter
1 medium peeled and finely chopped onion
1 clove peeled and crushed garlic
4 level teaspoons coriander seeds
Salt and freshly ground pepper
4 slices granary or wholemeal bread
8 level tablespoons soured cream
Chopped fresh corinder leaves (garnish)
