Fillet of Beef with Olives Recipe:
1. Roast the fillet of beef in a moderate oven of 350F (177C)
2. Baste the beef regularly with the wine and white stock
3. While the meat cooks, melt the butter in a saucepan
4. Stir the flour in the buttered pan and cook until the mixture begins to turn golden
5. Add the juices from the roasted beef into the saucepan
6. Cook and stir the sauce until it is smooth
7. Add a little more stock if necessary, to make a fairly thin sauce
8. Add the olives and heat the mixture well
9. Adjust the seasoning with a little pepper and salt
10. Arrange the fillet on a heated platter and surround it with the olives
11. Pour the sauce over the meat and serve whilst hot
