Baked Lobster Savannah

Baked Lobster Savannah:

  1. Plunge a 3 pound lobster into boiling water.
  2. Poach it for about 30 minutes.
  3. Remove the lobster to drain and cool.
  4. Cut off the claws and legs so that only the body is left.
  5. Hold the lobster with its top side up and cut an oval opening in the top of the
  6. shell from the base of the head to the tail, using kitchen shears.
  7. Remove all the meat from the body and claws.
  8. Cut the lobster meat into cubes.
  9. Put it in a buttered baking dish.
  10. Add 1 tablespoon butter and 1/4 teaspoon salt.
  11. Bake the lobster in a moderate oven (375ºF) for for 20 minutes.
  12. Drain off the liquid.
  13. Prepare 1 cup cream sauce.
  14. Enrich it with 2 egg yolks and 2 or more tablespoons Sherry according to taste.
  15. Add the lobster meat, 1/2 cup chopped fresh mushrooms and 1/4 cup diced green pepper.
  16. Cook the mixture over medium heat while stirring constantly, for about 15 minutes.
  17. Remove the pan from the heat.
  18. Stir in 1 red pimento (sliced), 1 teaspoon paprika and salt and pepper to taste.
  19. Pile the filling into the lobster shell.
  20. Sprinkle it with a mixture of 1/4 cup each of fresh bread crumbs and grated
  21. Parmesan cheese.
  22. Place the lobster on a shallow pan.
  23. Bake it in a moderate oven (375ºF) for 15 minutes or until the topping s golden.
  24. Arrange the lobster on a hot serving dish.
  25. Sprinkle it with several teaspoons of Sherry.
  26. Garnish it with lemon wedges.
