Parsnip Balls Recipe:
- Wash 6 parsnips.
- Drop them into boiling salted water.
- Cook for about 30 minutes or until the parsnips are tender.
- Remove the skins.
- Press the parsnips through a fine sieve.
- Stir in 1 tablespoon flour, 2 beaten eggs.
- Also stir in salt and pepper to taste.
- Form the parsnip mixture into small balls.
- Press the meat of 1 whole walnut into each.
- Sauté the parsnip balls to a golden brown in hot butter.
- Serve on a hot platter garnished with parsley.
