Spiced Brisket of Beef

Spiced Brisket of Beef Recipe:

1. Wipe the boned meat with a clean damp cloth and place it in a large bowl

2. Rub the meat well with salt, on all the sides

3. Cover the bowl with a thin cloth and leave it in the lower part of the refrigerator

4. Peel and finely chop the shallots and bay leaves

5. Put the chopped shallots and bay leaves into a bowl and add the remaining salt and the rest of the ingredients. Mix them together

6. Each day, rub this mixture into the salted meat and pour off any liquid that might have formed

(The beef should be left to steep in spices for 8days before being cooked)

7. After the 8days, Roll out the spiced meat neatly and tie it securely with fine string

8. Put the meat in a heavy-based pan and cover with warm water

9. Cover the pan and let it simmer over low heat for 4 to 5hours

10. Let the meat cool in the liquid then lift it out.

11. Place the meat between too plates with a heavy weight on top and leave it to press for 8 hours

12. Serve the spiced brisket cold and sliced

4 lb lean boned brisket of beef
10 oz of kitchen salt
2 shallots
3 bay leaves
1 level teaspoon of potassium nitrate
1 level teaspoon allspice
4 tablespoons brown sugar
1 level teaspoon of powdered cloves
1 level teaspoon of powdered mace
1 level teaspoon of crushed black peppercorns
1/2 level teaspoon of chopped thyme
