Smoked Salmon and Monkfish Snack Recipe:
1. Poach the monkfish in the fish stock for about 10minutes until they are tender
2. Leave to cool in the stock
3. Skin and bone the fish
4. Cut the fish into 20mm cubes
5. Wrap each cube in a piece of smoked salmon
6. Secure the wrapped cubes with cocktail sticks

Fish stock
4 oz (115g) Smoked salmon
