Shoofly Pie Recipe:
- Line a 7-inch pie plate tin with pie pastry and bake slightly.
- Work lightly together as for pastry 3/4 cup fine dry crumbs,
- Add 1/4 cup flour, 1 teaspoon cinnamon.
- Add 1/4 teaspoon nutmeg.
- Add 1/8 teaspoon ginger and 1/4 cup butter.
- In a separate pan add 1/4 cup hot water to 3/4 cup light molasses mixed with 6 well-beaten eggs.
- Pour this filling into the crust and sprinkle the crumbs over it
- Bake in a moderately hot oven until the pie is lightly browned and reduce the heat to 325° F. to bake for 20 minutes longer.
