Salmon with Cucumber and Green peppercorns Recipe:
1. Put the water, white wine, bay leaves and peppercorns in a large frying pan and bring it to the boil
2. Reduce the heat and add the salmon and cucumber
3. Cover the pan loosely and let it simmer gently for 10minutes until the salmon flakes when it is pressed near the bone
4. Remove the salmon and the cucumber from the pan and arrange them on a warm serving dish
5. Make a source by boiling the liquid remaining in the pan until it is reduced to half its quantity
6. Remove the bay leaves from the pan
7. Reduce the heat and stir in the cream
8. Whisk in the butter pieces, one by one until they are all blended smoothly into the sauce
9. Pour the sauce around the salmon and garnish the dish with the sprigs of chervil and serve immediately

115ml water
115ml dry white wine
2 bay leaves
12 green peppercorns
1/2 cucumber, peeled, seeded and diced
2 tablespoons double cream
2 oz (50g) butter, cut into small pieces
Sprigs of chervil (garnish)
