Lime cream cake

Lime cream cake Recipe:

1. Cream the butter and the sugar together until the mixture is light and fluffy

2. Beat in the 3eggs, one at a time

3. Sift the flour, baking powder and salt together

4. Stir the dry sieved ingredients alternately with the milk into the butter mixture

5. Add the grated lemon rind

6. Turn the batter into 4 prepared 8inch layer cake pans

7. Bake the layers in a moderately hot oven of 375F (190C) for about 30minutes or until they test done

8. Cool them on cake racks

9. Combine all the lime cream ingredients in a saucepan

10. Cook the cream over simmering water while constantly stirring until it is thickened

List of ingredients required:

1/2 cup butter
2 cups sugar
3 eggs
3 cups cake flour
3 teaspoons baking powder
A pinch of salt
1 cup milk
1/2 teaspoon grated lemon rind

For the lime cream:

Juice of 4 limes
2 cups sugar
2 beaten eggs
1 cup cold water
2 tablespoons butter
2 tablespoons cornstarch
1 cup whipped cream
