Rump Steak Recipe:
1. Trim the rump steak and cut it into 6 pieces
2. Beat the steaks flat with a rolling pin
3. Peel and finely chop the onion
4. Grate the lemon rind finely
5. Squeeze out the juice from the lemon and strain it, set it aside
6. Melt 2 oz of the butter in a large pan and fry the onions for about 5minutes or until they are soft and transparent
7. Lift the onion onto a plate and keep them warm
8. Fry 2steaks at a time over high heat for about a minute on both sides
9. Lift them out and keep them hot
10. Melt another 2 oz of butter until it starts foaming
11. Fry the other 2 steaks
12. Melt the remaining butter and fry the remaining 2 steaks in the same way
13. Return the onions to the pan
14. Stir in the sugar, lemon rind and juice, few drops of the sauce and the parsley
15. Cook the ingredients lightly then add in the steaks
16. Flame the steaks with warm brandy
17. Serve the steaks with the onion and brandy poured over them

2 level teaspoons caster sugar
1 large lemon
6 oz unsalted butter
1 and 1/2 lb top rump beef
Worcestershire sauce
4 tablespoons brandy
1 level tablespoon chopped parsley
