Potato Starch Spongecake Recipe:
1. Beat the egg yolks until they are very light and fluffy
2. Gradually beat in the cups of sugar
3. Beat in the grated rind and juice of lemon
4. Slowly stir in the cup of potato starch slowly
5. Carefully fold in the stiffly beaten egg whites
6. Pour the batter into a large baking tin without buttering it
7. Bake the cake in a slow oven of 300F (150C) for about 50minutes or until it is well-browned

9 eggs, separated
1 and 2/3 cups sugar
Grated rind and juice of 1 medium lemon
1 scant cup potato starch
