Pears cooked in red wine recipe
- Put the red wine into a large stainless steel saucepan with the sugar, orange and lemon juice and the spices.
- Heat gently until the sugar has dissolved, then bring to the boil for 1 minute.
- Carefully peel the pears, leave the stalks on.
- Put the pears into the spiced wine.
- Cover and look gently until the pears are just tender to be pierced with the tip of a knife.
- Turn the pears frequently during cooking.
- Using a slotted spoon, transfer the pears to a serving bowl and set aside.
- Bring the wine to the boil, then boil gently until it is reduced by about half.
- Pour the reduced wine over the pears.
- Allow it to cool, then cover and chill.
- Serve with lightly whipped cream.
Ingredients required:
- 70 cl bottle of red wine.
- 175 g (6 oz) granulated sugar
- strained juice of 1 large orange.
- strained juice of 1 large lemon.
- 10 cm (4 inch) piece of cinnamon stick.
- 6 allspice.
- 6-8 large ripe, but firm pears.
- lightly whipped cream, to serve.
