Minced Beef with Tomatoes Recipe:
1. Heat a 1/3 of the olive oil in a large pan
2. Put the tomatoes in the pan with the cut side facing down
3. Pierce each tomato with a fork and cook for 5minutes and then turn them over
4. Mix the parsley, garlic, salt and pepper together in a small bowl
5. Sprinkle the tomatoes with the garlic mixture
6. Lower the heat and cook the tomatoes until they are tender
7. In another pan, heat the remaining 1/3 cup of olive oil
8. Saute the onions in the oil until they are golden
9. Add the beef and stir the mixture well
10. Sprinkle the beef with the teaspoons of flour
11. Stir until the flour disappears and stir in the cups of broth
12. Add salt and pepper and cook for 15minutes
13. Put the beef in a shallow heatproof platter and arrange the tomatoes on top
14. Pour the cooking juices from the pan over the platter
15. Heat the platter for about 10minutes in a hot oven of 400F (205C)
