Madeira Cake Recipe:
1. Grease a 7inch round cake tin and line it with greaseproof paper
2. Beat the butter until it is soft
3. Add the sugar and cream until the mixture is light and fluffy
4. Add the eggs to the mixture one at a time while beating well after each addition
5. Sieve the plain and self-raising flour together with the salt
6. Fold the sifted mixture alternately with the strained lemon juice and lemon rind into the mixture
7. Turn the mixture into the prepared tin and level the surface
8. Arrange slices of thinly cut citron peel over the top
9. Bake in the center of the preheated oven for about 1 to 1 and 1/4 hours
10. Leave the cake to cool in the tin for 10minutes then turn out onto a wire rack
List of ingredients required:
6 oz (175g) butter or margarine
6 oz (175g) caster sugar
5 oz (150g) self-raising flour
4 oz (115g) plain flour
3 large eggs
A pinch of salt
Grated rind and juice of half lemon
Citron peel
The oven should be preheated at a temperature of 325F (160C)
