Gardner’s Chicken Recipe:
1. Cut the chicken into 4 or 6 pieces and wipe them clean
2. Remove the rind from the bacon and dice it
3. Peel and cut the onions into thin slices
4. Scrub and coarsely chop the celery
5. Clean and slice the mushrooms
6. Melt the butter in a large, heavy based frying pan
7. Fry the bacon, onions, mushrooms and celery in the butter for 5minutes
8. Drain the butter from the pan
9. Transfer the vegetables from the pan and spread them into a large casserole dish
10. Fry the chicken pieces in some butter until they are golden brown
11. Remove the chicken pieces from the oil and place them on the bed of the vegetables
12. Scrape the potatoes then peel and slice the turnips
13. Add the potatoes,turnips, tomatoes and the bouquet garni to the casserole dish
14. Season the dish with salt and the ground pepper
15. Cover the dish with kitchen foil and then cover it with the lid
16. Cook on the middle shelf of the oven heated to 300F (150C) for about 1 and 1/2 hours or until tender
17. Mix the chopped parsley and the chopped orange rind together and sprinkle the mixture over the casserole dish and serve immediately

1 chicken, approximately 3 lb
2 oz streaky bacon
2 large onions
2 sticks celery
1/4 lb mushrooms
2 to 3 oz unsalted butter
1 lb potatoes
1/2 lb turnips
14 or 16 oz tin of tomatoes
1 bouquet garni
Salt and black pepper
Fresh parsley and orange rind (Garnish)
