Chocolate Fudge Recipe:
1. Place the sugar and water in a heavy-based pan and dissolve the sugar over low heat
2. Bring the mixture to the boil
3. Add the condensed milk and boil gently until the thermometer registers 240F (115C)
4. Stir occasionally to prevent sticking
5. Remove the pan from the heat and add the chocolate and raisins
6. Beat the mixture until it is creamy and thick
7. Pour the mixture into a buttered tin using a wooden spoon
8. Leave to cool for several hours
9. Cut the fudge into small pieces with a sharp knife and wrap them in waxed paper

1/2 pint water
1 large tin condensed milk
4 and 1/2 oz chocolate dots or plain cooking chocolate,grated
2 oz seedless raisins (optional)
