Beef Rolls Recipe:
1. Place each slice of beef between sheets of greaseproof paper and flatten it with a rolling pin
2. Trim the ham slices to fit the beef slices
3. Place the ham slices over the beef slices
4. Spread the ham slices with peeled and crushed garlic
5. Chop the eggs, raisins and the skinned salami then place them in a bowl
6. In the bowl, blend in the cheese, parsley, nutmeg and oregano
7. Season with salt and pepper
8. Divide the mixture equally over the beef and ham slices
9. Fold over the long sides to keep the stuffing in place and roll the slices up
10. Tie the parcels with fine string
11. Place the rolls in a buttered ovenproof dish
12. Pour over the stock and wine and cook in the center of the preheated oven for about 30minutes
13. Add the bay leaves, cloves and Marsala then cook for a further 30minutes

1/2 pint beef stock
1/2 pint dry white wine
4 bay leaves
12 thin salami slices
3 cloves garlic
12 thin slices beef sirloin
12 thin slices cooked ham
2 tablespoons Marsala wine
4 bay leaves
6 cloves
1 oz unsalted butter
5 oz raisins
2 oz grated Parmesan cheese
8 level tablespoons of finely chopped parsley
1/2 level teaspoon grated nutmeg
1/2 level teaspoon oregano
4 hard boiled eggs
The oven should be preheated at a temperature of 375F (190C)
