Beef with Ginger Wine

Beef with Ginger Wine Recipe:

1. Cut off any fat from the steaks and trim them into neat shapes

2. Dust the steaks lightly with the seasoned flour

3. Heat the oil and the butter in a heavy-based pan over moderate heat

4. Fry the beef steaks for about 10minutes until they are brown on all sides

5. Lift the steak slices onto a serving dish and keep them warm

6. Add the ginger wine to the pan and let it boil slightly while scraping up the pan juices with a spatula

7. Reduce the heat and let the mixture simmer for about 5minutes or until the wine is syrupy

8. Stir in the lemon juice and the cream

9. Simmer the mixture for a further 3minutes or until the sauce has a pale coffee colour

10. Season to taste with salt and pepper

11. Pour the sauce over the meat and garnish each piece with a lemon twist sprinkled with chopped parsley

1 teaspoon olive oil
6 tablespoons ginger wine
3 tablespoons double cream
1 dessertspoon lemon juice
2 oz unsalted butter
4 beef steaks, each a quarter inch thick and weighing about 3 oz

Garnish:

4 lemon twists
1 dessertspoon chopped parsley
