Caramel Custard with Peaches Recipe:
1. Scald the milk,cream and the vanilla bean
2. Beat the eggs, egg yolks and 1/2 cup sugar together thoroughly
3. Discard the vanilla bean from the hot milk
4. Gradually pour the milk into the egg mixture while vigorously stirring
5. Heat the remaining cup of sugar in a heavy pan until it is melted
6. Gradually stir in the cup of water and cook the syrup until it becomes caramel in colour
7. Pour the caramel syrup into a ring mold and turn the mold around and around until the entire inside is well coated
8. Let the caramel set and then pour in the custard
9. Set the mold in a pan of hot water and bake it in a moderate oven of 350F (180C) for about 45minutes or until a knife inserted near the center comes out clean
10. Cool the custard, and when ready to serve, unmold it into a serving dish
11. Fill the center of the mold with the 12 peach halves, poached in vanilla syrup until tender
12. Cover the peaches with whipped cream, sweetened and flavoured to taste, piling it high in the middle
13. Decorate the cream with the candied cherries
