Tyrol Cake Recipe:
1. Grease a 6inch round cake tin
2. Sift the flour, salt and cinnamon into a bowl
3. Cut the margarine up and rub it in the flour until the mixture resembles fine breadcrumbs
4. Stir the sugar, currants and sultanas into the breadcrumb mixture
5. Make a well in the center of the mixture
6. Dissolve the bicarbonate of soda in the milk and stir in the honey
7. Pour this honey mixture into the well of the flour mixture
8. Gradually work in the dry ingredients using a wooden spoon, adding more milk if necessary to give the mixture a firm dropping consistency
9. Spoon the mixture into the prepared tin and level the top
10. Bake in the center of the preheated oven for about 2hours or until well risen
11. Test with a fine skewer if the cake is cooked then cool it on a wire rack
List of ingredients required:
8 oz (225g) plain flour
3 and 1/2 oz margarine
3 level tablespoons clear honey
2 oz (50g) caster sugar
2 oz (50g) currants
2 oz (50g) sultanas
A pinch of salt
1 level teaspoon ground cinnamon
1 level teaspoon bicarbonate of soda
1/4 pint milk
The oven should be preheated at a temperature of 325F (160C)
