Stir-fried Beef and Broccoli Recipe:
1. Cut the beef fillet into thin strips of about 3mm
2. Mix the salt, pepper, cornflour and rub them into the pieces of beef
3. Trim the broccoli florets from the stalks length-ways into 3mm slices (peel away the outer skin if the stalks are tough)
4. Heat 3 tablespoons of oil in a large frying pan
5. Add the beef strips and the onion to the pan and stir-fry over brisk heat for about 3minutes
6. Remove the beef and onion from the pan and keep it warm
7. Add the remaining oil to the frying pan
8. Put the broccoli in the frying pan and stir-fry for 3minutes
9. Add the stock and the brown sugar and allow it to boil for 1minute
10. Return the beef and onion to the pan and stir-fry for 1minute
11. Add the soya sauce, sherry, ginger and garlic to the pan
12. Cook over moderate heat for a further 3minutes
13. Spoon the food onto a warm serving dish and sprinkle it with the shopped cashew nuts and spring onion tassels
14. Serve immediately

700g of beef fillet
Salt and freshly ground black pepper
4 level teaspoons of cornflour
400g of broccoli
6 tablespoons of olive oil
1 large finely chopped onion
6 tablespoons of chicken stock
3 level teaspoons of soft brown sugar
2 tablespoons of soya sauce
4 tablespoons of dry sherry
1 slice of fresh root ginger, 15mm thick, finely chopped
2 cloves garlic, peeled and finely chopped
For the garnish:
3 level tablespoons of chopped and toasted cashew nuts
Spring onion tassels
