Cheese Sticks

Cheese Sticks:

  1. Sift together 2 cups flour, 1 tablespoon double-action baking powder and 1 tablespoon salt.
  2. Cut in 3/4 cup butter with a pastry blender.
  3. Add 1 egg.
  4. Add 1 tablespoon milk.
  5. Make a dough that can be handled.
  6. Chill the dough for an hour.
  7. Grate 1/2 pound Cheddar, Parmesan or Edam cheese.
  8. Roll the chilled dough on a lightly floured board into a rectangle about 1/4 inch thick.
  9. Sprinkle half of the dough with half of the grated cheese.
  10. Cover it with the rest of the dough.
  11. Press the edges together to seal in the cheese.
  12. Fold the dough in half again.
  13. Roll it out to its original size.
  14. Repeat the process.
  15. Cut the dough into finger sticks.
  16. Bake the sticks on a dry baking sheet in a hot oven (450ºF) for about 10 minutes.
  17. Store in a tightly covered metal container.
