Smoked Haddock

Smoked Haddock Pie Recipe:

1. Fold the following ingredients into the white sauce: the skinned and flaked fish, lemon juice, parsley, green pepper, and eggs

2. Season the mixture with salt and pepper

3. Spoon the mixture into a fireproof dish

4. Sift the flour into a bowl

5. Rub the butter in the flour

6. Add the mustard, cheese and sufficient milk to make a soft pastry dough

7. Knead the dough lightly on a floured surface and roll out a circle large enough to fit the fireproof dish

8. Cut the pastry into 8 triangles and place them over the fish so that the points meet in the center

9. Brush the pastry with milk and bake in the oven for 25minutes at a temperature of 425F (220C) until golden

(serves 4 to 6 people)

Salt and black pepper
1/2 lb cooked white fish
1/2 lb cooked smoked haddock
Juice of a lemon
1/4 pint milk
2 tablespoons chopped parsley
1/2 small green pepper, chopped
2 to 3 oz grated cheddar cheese
2 hard-boiled eggs, chopped
3/4 pint white sauce
1 and 1/2 oz butter
1 level dessertspoon dry mustard
6 oz self-raising flour
