Roast Fresh Ham Recipe
- Remove the skin of the ham, rub with salt and pepper on all sides and let it stand for 1 hour at room temperature before roasting.
- Add onion stuck with cloves, carrots, celery and garlic, to the roasting pan.
- Pour melted butter over the ham.
- Bake in a hot oven for about 30 minutes, reduce the heat to moderately hot, continue to cook.
- Baste the ham several times with the wine for 25 per pound until it’s well done.
- Pour off the excess fat and add the flour to the pan while stirring well.
- Gradually add the white stock and the brandy.
- Cook for 5 minutes.
- Correct the seasoning.
- Carve the ham on a serving platter and pour half of the sauce over the slices.
- Garnish with parsley and serve with the rest of the sauce and a side dish of applesauce.
