Duchess Potatoes

Duchess Potatoes Recipe:

  1. Peel 2 pounds potatoes.
  2. Cut them into even pieces.
  3. Cook them in boiling salted water to cover until they are soft but not mushy.
  4. Drain and dry by shaking the pan over the fire until the moisture has evaporated.
  5. Rub the potatoes through a sieve or put the through a ricer.
  6. Add 2 tablespoons butter.
  7. Add 1 teaspoon salt.
  8. Pepper to taste.
  9. Add 2 slightly beaten eggs with 2 egg yolks.
  10. Beat in the mixture with a spoon until it is fluffy.
  11. Duchess potatoes are used to garnish hot serving dishes.
  12. Pipe the mixture through a pastry tube in a decorative design.
  13. Return the dish to the oven or place under the broiler to brown.
  14. Or brown the potatoes on a baking sheet in any desired shape.
